For the bean salad, first break the washed beans. Put them in boiling, salted water and cook for 20 minutes. Drain in a colander and let cool.

In the meantime, peel and finely dice the onion. Mix a marinade with vinegar, pepper, salt and a pinch of sugar. Pour over the beans and let the bean salad infuse for half an hour before serving.
