Carefully bone the pike fillets and cut them into smaller pieces. Blend in a food processor (or cutter), gradually adding ice-cold whipping cream and adding kernel oil drop by drop, until smooth. Season to taste with salt and pepper and pass through a sieve. Bring a sufficient amount of salted water to the boil, reduce heat. Using a soup spoon, make elongated dumplings from the mixture and let them steep just below boiling point for about 8 minutes. Lift out and drain well. Divide the well-watered, drained pork net into equal-sized pieces, wrap a pike dumpling in each and fry in hot clarified butter until crispy on all sides.

Preparation Tip:

The pike gnocchi are perfect as small bites with wine. But they can also be served on mashed potatoes or celery and poured over with a little concentrated fish stock to make a complete meal.
