For the fritule, first sift the flour through a sieve into a bowl. Add salt, egg yolks, sugar, raisins, melted butter, 25 ml brandy and lemon zest.

Dissolve some sugar and yeast in 100 ml of milk. Set aside briefly so that the yeast rises. Then add to the flour. Add enough milk so that the dough becomes viscous and you can scoop it out with a spoon.

Stir the dough well with a wooden spoon. Form small portions with a spoon and fry in hot oil. Turn each piece over so they all turn nice and yellow on all sides.

Drain the baked fritule on a paper towel, drizzle with remaining schnapps and sprinkle with powdered sugar.
