Cut mozzarella balls into quarters, cut larger mozzarella loaves into small cubes. Pit olives and cut into fine wedges. Mix mozzarella and olives with the remaining ingredients and season to taste. Toast bread slices without fat and spread some mozzarella mixture on each. Place in the preheated oven and bake briefly under the grill (or at the highest top heat). If desired, drizzle again with a little olive oil.
