First prepare the quantity for the potato pancakes. To do this, coarsely grate the potatoes – cut the onions into strips – mix well with eggs, spices and stir in the flour.
Bake palm-sized patties in fat. Keep warm.
Cut the onion and apples into rings. Roast them in butter and a little oil.
Slice the calf’s liver very thinly and flour it. Heat fat in a frying pan and fry the liver in it, only now season with pepper and salt ( otherwise it will be chewing gum ).
To serve, place potato pancakes on a plate – liver on top and cover with onion and apple rings.
Melt some butter in the frying pan where the liver was fried in and pour over the whole.
Tip: Cook only with high quality spices – they are the be-all and end-all in a good dish!
