First, preheat the oven to 120 °C. Press the garlic and mix with the caraway seeds and salt to make a paste. Rub the roast pork generously with it.
Now place the roast in a roasting pan and roast in the oven for 3 hours, repeatedly basting with the juices.
10 minutes before the end of cooking, turn on the grill and increase the temperature to 180 °C so that the roast is nice and crispy on the outside.
Serve the roast pork with bread dumplings and steamed cabbage (e.g. warm cabbage salad).
Preparation Tip:
Be sure to keep the gravy (=Bratlfett'n) that has escaped during roasting, this tastes great when cooled as a spread on brown bread!
